Next time you’re craving cheez-its whip up some homemade cream cheese crackers. They’re gluten free, flavorful, unbelievably tasty, and keto-friendly.

Yield: 10 tablespoons


2 beakers shredded mozzarella cheese 2 tablespoons sour cream or cream cheese 1 large egg 1 cup almond flour 3 tablespoons green onion( finely chopped) 1/2 teaspoon sea salt 1/4 teaspoon black pepper


Add mozzarella cheese and cream cheese to a large mixing bowl. Place in the microwave and heat for 1-2 minutes until mixture is melted. Remove mixing bowl from microwave and add egg, almond flour, chives, salt, and pepper to the cheese mixture. Use your hands to mix and distribute ingredients evenly. Wrap dough in plastic wrap and transfer dough to the fridge for 15 -2 0 minutes. Preheat oven to 400 degF and line a baking sheet with parchment newspaper. Remove dough from fridge and place in between two pieces of parchment paper and roll to 1/8 ” thickness. If the dough is sticking to the parchment paper, sprinkle extra almond flour to roll. Remove top piece of parchment paper and cut dough into squares or use a cookie cutter to form shapes. Add each cracker to prepared pan. Cook for 8-10 minutes until edges turn a light golden brown.
